Growing up in a family with both parent’s working away from home, my parents chose to spend most of their time away from work together as a family.  Having the time spent together was nice, but it also meant a lot of eating out and convenience foods.  As a family of three, labor intensive dinners or homemade treats was never a priority.

Most of my culinary skills evolved after getting married. That means I’ve experienced lots of trial and error, successes and failures.   While it’s no fun to experience a total fail in the kitchen, I have learned some valuable things along the way.

Lessons like the importance of using PAM Cooking Spray before doing any holiday baking.  After relinquishing half of a recipe to the side of a dish and then scrubbing said dish until my hands ached, I always make sure to use PAM before baking.  I don’t have to worry about piling on extra calories by using PAM Cooking Spray preventatively either since the new formula has zero calories per serving.

For a pre-Thanksgiving meal this year, I whipped up a delicious Pumpkin Dump Cake. Since there wasn’t a backup dessert, I wasn’t about to let it flop.  Even though the dish is loaded with butter, it can still get a little sticky so spraying the dish ahead of time with PAM Cooking Spray helped make it a success.

Pumpkin Dump Cake Recipe

Pumpkin Dump Cake

Not your typical pumpkin dessert. This easy dessert is flavorful and always a crowd pleaser.
  • 1 (29 oz.) can pumpkin puree
  • ¾ c. white sugar
  • ¼ c. brown sugar
  • 3 eggs
  • 1 (12 oz.) can evaporated milk
  • 1 tsp. vanilla extract
  • 4 tsp. pumpkin pie spice
  • 1 pkg. yellow cake mix
  • ¾ c. butter, melted
  1. Preheat oven to 350 degrees.
  2. Lightly spray 9×13 baking dish with PAM Baking Spray.
  3. Mix together pumpkin puree, sugars, eggs, vanilla, pumpkin pie spice, and half the cake mix together; spread evenly in prepared pan.
  4. Evenly pour remaining dry cake mix over top of pumpkin mixture and drizzle melted butter over the top.
  5. Bake in prepared dish for 55-65 minutes, or until toothpick inserted into center comes out clean.

    • I actually make a very similar cake during the holidays. Mine also uses the pumpkin filling with boxes yellow cake but I put chopped pecans & walnuts on top. The sweet & savory crunchy topping is amazing! This has become a huge hit with my whole family! :)

  2. hmmm, it’s hard to pick a favorite. This year we made pumpkin cupcakes with cinnamon cream cheese frosting. I had a little bit of batter left over so we decided to use it to make mini cupcakes…only problem was that I didn’t have any liners for my mini muffin pan. I used Pam and the cupcakes just slid out. I so happy that it worked out! Mini cupcakes are so much fun to eat and I’m glad I can count on Pam when I forget to stock up on liners.

    EASY AS TOAST CHRISTMAS BREAD PUDDING: Toast 12 slices of raisin bread (Not too dark, should be lightly toasted),butter each slice, cut into cubes, press mixture into small bread loaf pan., add 2 cups of eggnog- booze or the fake store version, best with the latter. Bake 325 for 45 minutes or until set. Serve with hard sauce or warmed lemon curd
